The perfect Upma/uppitu recipe : Family recipe © @handfulofflour This is a semolina based savory dish eaten for breakfast in many South Indian states especially Karnataka. My mom has perfected this over many years. In the region , it’s often called uppitu although across india, people know it as Upma. Tips: - ensure right semolina to water ratio - ensure you roast semolina well until light brown - don’t shy away from oil/ ghee if you’re after a good taste! (Note- This recipe has been shared from my family's kitchen and personal experience over the years. If you recreate or share it, I'd appreciate a credit to @handfulofflour. ) 🍃☘️ Ingredients: 2 small cups coarse semolina 4-5 large tbsp ghee/ oil ( reduce this if you prefer a less oilier option but it may affect the taste) 1 large onion finely chopped 2 small tomatoes finely chopped 2 inch ginger piece finely grated 1-2 green chilli finely chopped 10 curry leaves 2 dried red chilli 1-2 tsp mustard seeds 2 tsp white urad dal 1 tsp sugar 1/2 tsp turmeric Salt - roast semolina in a pan on medium heat till light brown and fragrant - keep aside - take oil or ghee in a pan. Once warm, add mustard seeds, urad dal, dried red chilli, curry leaves and green chilli . - add onion, tomato, grated ginger and fry for 3 mins. - add turmeric, salt and sugar . - add 5 cups of boiling water to this in a semolina: water ratio of 1:2.5 if you prefer a more dry consistency or 1:3 roughly if you prefer a more watery consistency . Water needs to be boiling! ( caution- the semolina may splutter in the next step so wear gloves and maintain a safe distance between yourself and the pan) - once the mixture is boiling, slowly add roasted semolina with a spoon and keep stirring as you add it so that no lumps are formed. If it splutters too much, take it off the heat and mix well . -close the lid and let the semolina completely absorb all the water .
