Amma’s pathrode recipe ( mangalorean style) Tips ( very important ❣️) • Source your colocasia leaves from a clean area and avoid waterlogged patches. • The black stem variety (black stem kesavu) is generally preferred as it tends to be less itchy. • Do not skip the tamarind. It helps reduce the irritation leaves can cause. • Byadgi chillies provide colour and flavour rather than significant heat. If you prefer a spicier Pathrode, increase the number of chillies or add a few Guntur chillies. (This family recipe is lovingly shared , if you recreate or share it I would appreciate a credit to @handfulofflour ) ❣️ Ingredients • 15 large black stem colocasia (kesavu) leaves, washed and dried completely • 3 small glasses dosa rice, soaked for 4 hours • 10 Byadgi chillies • 1 tbsp cumin seeds • 1 tsp coriander seeds • Lime-sized ball of tamarind • Jaggery, about half the size of the tamarind ball • ¼ tsp hing • 1 small cup fresh coconut • Rock salt, to taste • Water, as needed Method Grind the soaked rice until slightly coarse Add the Byadgi chillies, cumin seeds, coriander seeds, tamarind, jaggery, hing, coconut and rock salt. Add water as required and grind into a smooth batter. The consistency should be similar to a thick dosa batter..spreadable but not runny. Wash the colocasia leaves well and dry them completely. Place the largest leaf shiny side down and spread a thin, even layer of batter over the entire surface. Place another leaf on top and spread more batter. Continue until you have 4 layers of leaves, coating each layer generously with batter. Fold the sides inward and roll tightly from the base to form a neat log. Spread a little extra batter over the outside of the roll and seal the ends with batter Place in a steamer and steam for 35–40 minutes, until fully cooked Remove and allow them to cool completely. This step is important as the slices hold their shape much better once cooled. Slice into rounds For Shallow-Fried Pathrode Heat a little ghee in a pan over medium heat.
