This is everything I fed my family This is everything I fed my family of three in a week for dinner. For reference, I have a 17-month-old little boy and I'm a full-time food blogger and also a full-time stay-at-home mom. So I am very busy. I wear a lot of different hats, but one thing that remains the same is dinner will be on the table every single night of the week. And if I'm gonna be making dinner, it needs to be tasty, somewhat healthy, easy to make, and definitely easy to clean. I usually cook Sunday through Thursday night, but this happened to be Labor Day weekend, so I had Sunday night off. Monday night for dinner, we were traveling in, so I needed a one-pot meal. I made my go-to healthier chicken spaghetti. It comes together in one pot. I make it healthier by not adding heavy cream, and I know my toddler will eat it, so it's a win-win all around. It makes a decent amount of food, so if you have a large family or want leftovers, this is perfect for you. Tuesday night, I made smash burger tacos. I can't believe this is the first time I've ever made these. They are so quick and easy to make and taste so good. My toddler essentially thought he was eating a quesadilla, so he loved this one. I left the onions and lettuce off his, but for my husband and I, I added diced onions and shredded lettuce. I made a campfire sauce for the side, which I don't know if that's actually what it's called, but it's just what my dad calls it. It's basically just like a special little sauce. It makes the whole dinner. So make sure you do not skip the sauce. Wednesday night, I had a busy evening because we go to swim lessons. So I wanted something that I could prep ahead and then bake when we got home. So I started with a tomato, cucumber, feta salad. Put that in the refrigerator for later and then prepped my salmon by just seasoning it and placed it in the refrigerator as well. When we got home, I just cooked some rice and then I plated this up with a homemade ranch. This was really good and a simple dinner. It's like a Mediterranean bowl. I highly recommend it. Thursday night, I made a healthier lasagna soup. I used cottage cheese in my lasagna soup, so it's kind of like a cheat, but it adds the perfect creamy element and I highly recommend trying it out. I forgot to mention, this also comes together in one pot, so it's so easy to make and clean. But that is everything I made for dinner for my family this week.
