Easy dinners for hard days episode 12✨ This creamy enchilada skillet is SO easy and SO GOOD! Creamy Enchilada Skillet: 1 lb ground beef 1 packet taco seasoning, divided ¼ cup water 1 jar salsa verde, about 16 oz 1/2 cup sour cream (or more if you want your sauce creamier) 6–8 flour tortillas 1½–2 cups shredded Mexican cheese blend Optional: tortilla chips, extra sour cream, fresh cilantro, rice for serving Directions: Preheat your oven to 350*F. Brown the ground beef in a large oven-safe skillet over medium-high heat. Drain any excess grease, then return the beef to the skillet and stir in the taco seasoning (leaving about 2 teas. remaining) and water according to the packet directions. Transfer the seasoned beef to a bowl and set aside. Without cleaning the skillet, add the salsa verde and stir over medium heat until warmed through. I like to add 2 teas. of the taco seasoning to the salsa. Reduce the heat to low and stir in the sour cream until smooth and creamy. Remove about half of the sauce from the skillet and set aside. Tear or cut the flour tortillas into roughly 2-inch pieces. Layer half of the tortillas over the sauce remaining in the skillet, followed by half of the seasoned beef, half of the reserved sauce, and a layer of shredded Mexican cheese. Repeat with the remaining tortillas, beef, sauce and cheese, finishing with a generous layer of cheese on top. Bake in the oven until the cheese is melted and broil for 2-3 minutes so it gets a nice crispy top.
