Healthy Sweet Potato Chocolate Rolls You won’t believe what else you can make with a sweet potato 🍠 Get my Sweet Potato Cookbook at the link in my bio 📖 INGREDIENTS: For the Dough: 1 Medium-Large Sweet Potato (260g cooked purée) 1 Large Egg 2 Tbsp Honey 1 Tbsp Vanilla Extract Sea Salt (to taste) 1 Tbsp Baking Powder 25g Cocoa Powder 350g Organic Wholewheat Flour (add gradually as needed) For the Filling: 60g Butter 60g Raw Honey 20g Cocoa Powder Sea Salt (to taste) For the Frosting: 120g Grass-fed Cream Cheese 60g Raw Honey 20g Cocoa Powder Tsp Vanilla Extract Sea Salt (to taste) METHOD: 1. Roast the sweet potato at 200°C for 45–60 mins until completely soft. Scoop out 260g flesh, mash until smooth and chill if possible. 2. Preheat oven to 180°C. Mix the sweet potato, egg, honey and vanilla. Stir in the baking powder, cocoa, sea salt and flour until a soft, slightly sticky dough forms. Rest for 5–10 mins. 3. Roll the dough into a 1cm thick rectangle. 4. Mix the butter, honey, cocoa and sea salt into a smooth paste and spread evenly over the dough. 5. Roll into a log, slice into 6 rolls and place into a lined baking dish. 6. Bake for 20–25 mins until lightly golden and set. 7. Mix the cream cheese, honey, cocoa and sea salt until smooth, then spread over the warm rolls. 8. Cool before serving, or chill for 1–2 hours for the best texture, enjoy!
