If you are one of those people that has sourdough starter sitting in the back of your fridge what to do with, this one's for you. I'm making pumpkin spice sourdough discard scones. Starting by mixing together flour, baking powder, pumpkin pie spice, sugar, and a little bit of salt. Some really cold butter into the flour. In a separate bowl, my sourdough discard, heavy cream, an egg, and vanilla. Mixing that until everything is nice and smooth. Once that's, I'm pouring my wet ingredients into the dry and gently mixing everything together. You don't want to overmix here because we still want that soft, flaky dough comes together. I put it on a flat surface and shape it gently into this. You want this at least 1 inch thick. Now, a lot of recipes called for it to be cut into eight pieces. I did six. Preheat your oven to 400. Get out a baking sheet and line that with parchment paper. Add your scones to the baking sheet, making sure there's enough room between each one. This next part is completely optional, but I like to brush the tops with milk to get them that golden brown color after they bake. Bake those for about 20 minutes and let them cool. While those are cooling, I make maple glaze with powdered sugar, heavy cream, maple extract, and salt. All I was missing was a hot cup of coffee with these. They turned out so good.
