This is my blueberry crumb scone with cream cheese glaze on top of it. Now, I don't like to toot my own horn very often, but to toot, this is the best scone recipe that you're ever going to find. The first thing we're gonna do is just make a crumb topping first scones. Quarter cup of light brown sugar, packed, third of a cup of unbleached all purpose flour. Mix those together. Then we're gonna pour in three tablespoons of salted butter that I've melted. Mix it to incorporate that butter. Then we're just gonna set this aside while we work on our scone dough. Two and a half cups of unbleached all purpose flour. To that, we're gonna add a quarter cup of granulated sugar, a tablespoon of baking powder, a teaspoon of salt. Eight tablespoons of salted butter that I have shredded and then stuck back in my freezer for good 20 minutes, just to let it firm back up. Add your butter in and toss with the flour. One and a quarter cup of heavy cream, cold, came straight from the refrigerator. Two teaspoons of vanilla extract. Add your wet ingredients to your dry and you're just gonna give this a mix until it starts to come together, something like that. Add a cup and a half of frozen blueberries. We want to keep this mixture as cold as possible and the frozen blueberries helps achieve that. I'm just gonna fold those blueberries in with my hands. Turn your dough out and you're gonna pat this into a circle. You don't want to bring the temp up too much of your dough if you can help it. So you're just gonna do this as quick as possible. Your frozen blueberries are gonna pop out of your dough. It's okay. Just put them on top and push them back in. I patted this out into about a 12 inch circle. Now we're gonna cut this into eight pieces. Just like you would cut a pie. So you want eight wedges. Place your scones on a cooking sheet lined with parchment paper. Once you have all your scones on your cooking sheet, you're gonna take that crumble mixture and you're gonna evenly divide it and place it right on top of the scones. We're gonna place our tray in our freezer. We're gonna let these firm back up for about 30 minutes while we preheat our oven to 400 degrees Fahrenheit. I'll be back. You're gonna bake them for about 22 to 25 minutes, until the tops and the edges start to turn a light golden brown. You're also gonna allow these scones to cool completely on your cooking sheet. This is just the cream cheese glaze. I'll put the ingredients and then instructions on how to make it. It's just basically a really loose cream cheese frosting. I'm gonna drizzle this over the top. Can you see the inside of that scone? It's not your typical scone. It's soft, it's moist. And yeah, it's absolutely delicious. So all I have for you today. We'll see you tomorrow.
