Easy Fast Bread — Manakeesh Style Soft, fresh, and delicious homemade bread topped with zaatar or cheese. This is such an easy recipe when you’re craving homemade manakeesh without spending hours in the kitchen. Ingredients * 4½ cups all-purpose flour * 2 cups warm water * 1 teaspoon sugar * 1 tablespoon yeast * 1 teaspoon salt * 1 tablespoon olive oil * 1 cup zaatar spice or cheese For the Zaatar Topping * ⅓ cup vegetable oil * ¼ cup olive oil * Extra vegetable oil for your hands and greasing the bowl Instructions 1. Activate the yeast: In a large bowl, combine warm water, sugar, and yeast. Let sit for 5–10 minutes until foamy. 2. Make the dough: Add flour and salt to the yeast mixture. Mix and knead while slowly adding 1 tablespoon olive oil. Knead for 5–7 minutes until smooth and elastic. 3. First rise: Lightly oil the bowl, place the dough inside, cover with a warm towel, and let rise somewhere warm for 15–20 minutes, or until doubled in size. 4. Shape: Punch down the dough and divide it into equal-sized balls. Place on a tray, cover, and let rest for another 5–10 minutes. 5. Make the zaatar topping: Mix the zaatar with the vegetable oil and olive oil. Set aside. 6. Assemble: Flatten each dough ball into a round disk and spread the zaatar mixture evenly over the top. 7. Final rest: Let the prepared dough rest for another 5–10 minutes in a warm area. 8. Bake: Preheat oven to 450°F. Place the dough rounds on a lined baking tray and bake for 10–15 minutes, or until golden brown. For Cheese Manakeesh: Bake the dough for about 7–8 minutes first, then add the cheese. Return to the oven and bake until the cheese is melted and beautifully golden. Serve warm with labneh, olives, fresh vegetables, or your favorite sides. Tip: The dough rises quickly because of the warm environment, so keep an eye on it. Don’t skip the short second rise—it helps give the bread a lighter, softer texture.
