4 Bananas, mashed (about 1 1/2 Cups)
2 C. Flour
1 C. Sugar
1/2 C. Oil
2 Eggs
1 Egg Yolk 1 tsp. Vanilla
1 tsp. Baking Soda 1/2 tsp. Baking Powder 1/2 tsp. Salt 1/2 tsp. Cinnamon 3/4 C. Walnuts (chopped) 3/4 C. Pecans (chopped) Heat oven to 350°F. Line a metal loaf pan with parchment paper and lightly grease it. Mash the bananas until mostly smooth. Add the sugar, oil, eggs, extra egg yolk, and vanilla and whisk until thoroughly combined. Add the flour, baking soda, baking powder, salt, and cinnamon. Fold everything together just until no dry flour remains. Do not overmix. Fold in 1/2 cup walnuts and 1/2 cup pecans, reserving the remaining walnuts and pecans for the top. Pour the batter into the prepared loaf pan and sprinkle the reserved walnuts and pecans over the batter. Bake at 350°F for about 65 minutes. Begin checking around 55 minutes. A toothpick inserted deeply into the center should come out without wet batter. Let the loaf cool in the pan for 15 minutes. Lift it out and allow it to cool completely before slicing. For the dense, moist Starbucks-style texture and clean café-style slices, let the completely cooled loaf rest wrapped for a few hours or overnight before slicing.
