Starbucks went $6 bucks for a slice of lemon loaf. Well, here's how you can make it at home. The whole loaf. So you need one and a half cups of all-purpose flour, one and a half teaspoons of baking powder, half a teaspoon of salt. Whisk that together and set it aside. In another bowl, add one cup of sugar and the zest of two lemons. Work that lemon zest into that sugar. This is gonna give it extra lemon flavor. Now slowly whisk in three eggs, one at a time, until it's fully incorporated. Then add the next egg and mix it in, then add the next egg and mix it in until you mix all three eggs in. Now that's smooth. Whisk in half a cup of sour cream, half a cup of vegetable oil, and the juice of one lemon, about two tablespoons. And a teaspoon of vanilla. Mix that all together until it's smooth. The wet ingredients are combined. Add those dry ingredients back in. Mix it up and fold it over itself, just until it's incorporated. Don't overmix it. And that's the lemon loaf batter. Now pour that batter into a loaf pan, lined with parchment paper. Bake it at 350 for 50 minutes. Once that lemon loaf is finished baking, allow it to cool in the pan for 15 minutes, then lift it out and allow it to cool completely. And for the icing that goes on top, you need one and a half cups of powdered sugar, two tablespoons of lemon juice, half a teaspoon of vanilla, and one to two teaspoons of additional lemon juice, only if needed. Whisk until it's thick and creamy. You don't want it runny. You want it thick. Because look, it should be like this. It should be thick. Yeah, thick and creamy. Now spread that thick lemon icing on top of that lemon loaf. Allow that lemon icing to set up for about 20 to 30 minutes before you make some big slices. And look, y'all, it doesn't have to be perfect. That's what it looks like.
