This cheesy Mexican street corn dip is my current hyperfixation 🤤🌽 it's so creamy and makes the perfect snack or side to bowls/tacos! Ingredients: 2 tbsp olive oil or butter 2 cups frozen corn 2 tbsp Mingle Taco Seasoning 180g tub @Mingle Seasoning x @Fresh Fodder Spicy Capsicum Dip 1 cup sour cream or Greek yoghurt 1 cup Mexican cheese, grated 2 spring onions, finely sliced Juice of 1 lime Mingle chilli lime seasoning Corn chips, to serve Method: 1. Heat the olive oil/butter in a fry pan over high heat. Add the frozen corn and cook, for 8-10 minutes until the corn is charred. 2. Reduce the heat, add taco seasoning, capsicum dip and sour cream/yoghurt, stir to combine. 3. Add the cheese and stir until melted through. Mix in the spring onions and lime juice. 4. Transfer to a dish, sprinkle with chilli lime seasoning and spring onions. Serve warm with corn chips. Serves 6-8 #mexican #EasyRecipe #corn #healthysnack
