School dinner series - episode 6 - Mac and Cheese People often make the mistake of over baking this so it turns out dry. Also, not making or using enough sauce.. follow these steps and you’ve got yourself a saucy mac and cheese. 50g plain flour and butter - you can do more or less of the flour and butter, just make sure you do equal parts of both. Milk - as much as you need to make a thick sauce. I did about 500ml - adjust it to how you thick/runny you like it. Tbsp paprika 1/2 Tsp garlic puree - more if you want more Salt and white pepper to taste (you can use black pepper, but my daughter hates it and says it’s spicy so I always use white) Tsp Dijon mustard Grated mature cheddar, mozzarella and Red Leicester - as much as you like. I do around half a cup each and little bit more Red Leicester for the top. Get your oven on to preheat then get your pasta on to cook as per instructions. Melt the butter, add the paprika, salt and pepper and mix and cook out for a minute or so. Add flour to make a roux (paste) then bit by bit add the milk until you have a thick sauce. Add the mustard and garlic puree mix to combine then add your cheese and mix until it melts. Mix the pasta into the sauce, add half the pasta to an oven dish, sprinkle in some mozzarella then add the rest of the pasta and top with Red Leicester. Into the oven for around 15 min then under the grill to crisp up the top for 3-4 min or until it’s how you like it. #schooldinners #macandcheese #schoollunch #schoollunches #schoolmeals
