School dinner series - episode 16 - cheese and potato pie Potatoes - I did 8 small Maris piper but I would have done 4 if they were bigger 1 medium onion - diced 1 knob of butter to cook the onions 3 tbsp butter for the mash (more if you need it) Cheddar and Red Leicester Salt and white pepper for seasoning Boil potatoes until soft Saute onions Put through a rice or sieve if you don’t have a ricer Add butter salt and pepper and mix with a spoon Add onions and 2/3s of the cheese and mix again until everything is incorporated. Add the mash to a dish or 2 small dishes and spread out evenly.
