I think the reason Sweetgreen, Cava, and all the slop bowl places are failing right now is because when money's tight, I don't want to spend money on food I can make myself. Like, I don't know how to make sushi. That's a mystery to me. I feel like you need to climb a mountain and learn from a master-apprentice kind of situation to figure out how to do that. But what I do know how to do is put slop in a bowl. I don't know how to make the perfect burger, and I don't even know where to begin for that, so I'll buy a burger. But what I definitely know how to do is take a bowl, take a handful of slop, and combine the two.
