4 realistic dinner ideas mom of 4 | 2 jobs Here are 4 realistic dinner ideas I've made recently as a busy mom of 4 working two jobs. First up is a family favorite, it's my skillet lazy lasagna. This one comes together in right around 30 minutes all in one pan. All you have to do is layer meat sauce, cheesy ravioli, and shredded cheese into a pan and bake it. This is everything I bought from Trader Joe's but of course buy whatever you like for your tacos. Take up those fish sticks until they're extra crispy. Layer on 2 to 3 fish sticks per tortilla. Top with cheese, the remaining ravioli, sauce and more cheese! Bake for 20 to 25 minutes (you can broil for the last 2 minutes to brown the cheese). Let rest for 5 minutes and serve with fresh basil and grated parm. Enjoy! Next up is my chicken taco casserole. It might not look that delicious but it is so good and because I'm using rotisserie chicken, it's beyond easy. All you have to do is layer all of these store-bought ingredients together. Top with extra cheese, bake it and you're ready to eat. I like serving mine with sour cream and some pickled jalapeños. Of course I made a plain chicken quesadilla for my pickiest eater. And maybe my favorite of the week was my 90s mom taco salad. Cook up your ground beef with taco seasoning and water and let simmer for a couple minutes. Add in the beans and stir together.
