Today I'm making one of South Africa's most comforting classics. MELKKOS which literally means "milk food" I didn't grow up eating Melkkos. I actually discovered it after moving to Germany feeling homesick and started cooking classics I missed! And when I found this one, I was happy! This is basically a warm hug! Before you start, grease your pot generously with butter, this keeps the milk from burning while it cooks. In a separate bowl combine flour, baking powder, a pinch of salt Then add cubed butter and rub it through your fingertips until it looks like soft bread crumbs. The crumbs should be no bigger than a pea for that perfect texture. Now bring your milk to a gentle simmer, gradually sprinkle in that flour mixture whisking gently until it thickens into silky, slow popping bubbles. Repeat this process a couple of times. When it's done, it should have a slightly lumpy, creamy consistency, and make sure to cook it long enough so there's no raw flour taste. Finish with some cinnamon and sugar and if you want a little extra butter never hurts. This is pure comfort even if, you didn't grow up with it.
