I absolutely love bruschetta so these chicken bruschetta bowls are right up my street 🍗🍅 We had these as our meal prep for lunches last week, just keep the salad separate so you can warm up the chicken & potatoes in the microwave each day. To make 4 bowls you will need: For chicken - 6 chicken thighs 3 tbsp balsamic vinegar 3 garlic cloves 2 tsp italian herbs 1 tsp smoked paprika Pinch salt & pepper For potatoes - 400g baby potatoes quartered 2 tbsp olive oil 2 tsp smoked paprika 2 tsp italian herbs 1 tsp garlic granules 1 tsp onion powder Pinch salt & pepper Salad - 1 red onion finely diced 400g cherry tomatoes diced 1 tbsp olive oil Handful fresh basil finely chopped Pinch salt Optional sides - Balsamic glaze Lettuce To a bowl add the potato ingredients then mix well until evenly coated. Cook in the airfryer for 20 minutes at 180C or 25 minutes at 190C in the oven. To a bowl add the chicken ingredients then mix well until evenly coated. Cook in a pan on a medium heat for 4 minutes either side. You can also cook them in the airfryer for 15 minutes at 190C.
