I just know you're looking for a way to use up the rest of those peaches. The best part is you can even use fruit that is getting a little bit too mushy. They were kind of getting up. Strawberry peach lemonade concentrate. In your first step is just blend the peaches. You don't even have to remove the peel, which obviously is a win for me because I hate having to blanch and peel my peaches. As always, the recipe is going to be at the end for a screenshot, but you're literally just going to combine all of your ingredients into a pot and then heat that up over the stove until the sugar is dissolved. And as I'm dumping all of the sugar in, I'd like to remind you that this is a concentrate. So you're going to dilute it with two to three pints of water when you go to open up a jar. I skimmed the foam off of this. You can honestly skip this step. It doesn't change the safety or the taste, it just changes the appearance in the jar. Also, if you want to switch up the type of fruit that you use for the concentrate, you could absolutely do that. I've done so many variations.
