If you told me you were coming over for dinner in an hour, this is exactly what I'd make. Welcome back to my series Well Done, where I'm essentially grilling everything I eat. In hopes to combat the parasite, of course. Today we're making a summer Caprese chicken. It's essentially a six-ingredient, high-protein Caprese salad. Because who doesn't love tomatoes and mozzarella on a summer night? Since you only gave me an hour's notice, I did not have time to make a chicken marinade, so I used a packet of LAV Original Za'atar dressing. And as the basic girl I am, I really prefer my chicken slightly burnt. Like, you could give me a thermometer and tell me the internal temp is 165, but I probably still wouldn't believe you. So once you get a good char on your chicken, you layer on mozzarella slices and then top with your tomato mixture. Balsamic tomatoes, add some pine nuts and crispy breadcrumbs for crunch, and you're good to go. Like this one. Follow for more recipes like this one.
