Ingredients For the Steak 🥩 * 1 lb sirloin steak, cut into bite-sized pieces * ½ tsp kosher salt * ½ tsp black pepper * ½ tsp smoked paprika * 1 tbsp olive oil For the Cowboy Butter Sauce 🧈 * 6 tbsp butter * 4 garlic cloves, minced * 1 tsp Dijon mustard * Juice of ½ lemon (about 1 tbsp) * ½ tsp red pepper flakes (or less, to taste) * 1 tbsp chopped fresh parsley * 1 tbsp chopped fresh chives For the Pasta 🍝 * 18 oz refrigerated cheese tortellini * ½ cup heavy cream * ¼ cup grated Parmesan * Salt and pepper to taste Instructions 1. Bring a large pot of salted water to a boil. Cook the tortellini according to the package directions until just tender. Drain and set aside. 2. Season the steak with salt, pepper, and smoked paprika. 3. Heat olive oil in a large skillet over medium-high heat. Sear the steak for 2–3 minutes per side until browned. Transfer to a plate. 4. Lower the heat to medium. Add the butter and garlic and cook for about 30 seconds until fragrant. 5. Stir in the Dijon mustard, lemon juice, red pepper flakes, parsley, and chives. 6. Pour in the heavy cream and water. Simmer for 2–3 minutes, then stir in the Parmesan until melted and smooth. 7. Add the cooked tortellini and toss until coated in the sauce. 8. Return the steak (and any juices) to the skillet. Toss everything together and cook for 1–2 minutes until heated through. 9. Taste and adjust with salt, pepper, or extra lemon juice if desired.
