This is such an easy weeknight dinner that comes together in about 30 minutes! . Ingredients: -2–3 sweet potatoes, diced -Avocado oil spray -Salt & pepper -Paprika -Cinnamon -1 lb 93/7 lean ground beef -¾ packet Siete Taco Seasoning, divided -¼ cup water -12 oz frozen corn, cooked and cooled -½ cup nonfat Greek yogurt -½ cup light mayonnaise -¼ red onion, diced -¼ cup chopped cilantro -½ or 1 jalapeño, diced -Juice of 1 lime -Cotija cheese -Tajín . 1. Dice the sweet potatoes and place them on an air fryer tray. Spray with avocado oil and season with salt, pepper, paprika, and cinnamon. Toss to coat. Air fry at 400°F for 15–18 minutes, flipping halfway through, until fork tender. 2. Meanwhile, cook the ground beef in a lightly sprayed skillet, breaking it apart as it cooks. Once no longer pink, add ¾ packet taco seasoning and ¼ cup water. Stir until the beef is fully cooked and coated. 3. In a bowl, combine the cooked corn, Greek yogurt, light mayo, diced red onion, cilantro, jalapeño, remaining taco seasoning, and juice of 1 lime. Mix until creamy. 4. Assemble your bowls with sweet potatoes, taco meat, and the street corn mixture. Top with Cotija cheese and a sprinkle of Tajín.
