Satay chicken thighs 🫦 Ingredients (serves 2): For the chicken: 4 chicken thighs 1 tsp sesame oil 1 tsp minced garlic 1 tsp minced ginger 1 tbsp curry powder 1 tbsp soy sauce 1 tbsp fish sauce 2 tbsp coconut milk For the curry sauce: 3 tbsp smooth peanut butter 1 tsp minced garlic 1 tsp minced ginger 1 tbsp curry powder 1 tbsp fish sauce 2 tbsp soy sauce 1 tbsp honey / brown sugar Half a tin of coconut milk Served with: Coconut rice Pan fried broccoli Wedge of lime Crushed peanuts Firstly, marinate the chicken with the sesame oil, garlic, ginger, curry powder, soy sauce, fish sauce and coconut milk. Leave for as long as you can, ideally for a few hours. When ready, cook in the airfryer for 20-23 minutes or until fully cooked through. In the meantime, in a pan, add the peanut butter, garlic, ginger, curry powder, fish sauce, soy sauce, honey and coconut milk. Simmer on a low heat until thickened. Taste and season to your preference. At this point, fry the broccoli in some sesame oil on a medium heat for a few minutes on each side until charred. Turn down the heat, then add a splash of water and cover with a lid to steam. Also cook your rice to instructions. Serve up with the chicken thighs, rice, broccoli and curry sauce.
