FREEZER MEAL PREP
& recipes
ENCHILADAS
- 2-3 chicken breasts cooked & shredded
(salt, pepper, garlic powder, onion powder)
- 10 tortillas
- 1-2 cups of shredded cheese
- 1 cup of sour cream
- 2 cans of enchilada sauce
I cooked my chicken in the crock pot. Shredded it, I added 1 cup of sour cream, 1 cup cheese, 1 can of enchilada sauce. Stuff your tortillas, then cover with another can of enchilada sauce and more cheese!
TACO PASTA
- 1 pound of ground beef
- 1 packet of taco seasoning
- 1 box of pasta of your choice (I used rotini)
- 1 jar of salsa
- 1-2 cups of shredded cheese (I used Colby Jack)
- 1/3 cup of beef broth
Brown ground beef & boil pasta. Add taco season to beef. Layer pasta, beef, cheese, and salsa. I mix mine around a bit but top off with cheese. I use 1/2 cup of beef broth to get the remaining salsa out of the jar!
RAVIOLI
- 1 pound of ground beef (I season with Italian seasoning)
- 1 jar of spaghetti sauce
- 1-2 cups mozzarella
- 1/2 bag of family size ravioli (I did great value brand)
- 1 block of cream cheese (chef optional)
Brown ground beef, boil your ravioli, combine beef, spaghetti sauce, cream cheese, Layer sauce mix, ravioli, mozzarella however you want!
Freezer Meals
I cover all mine with clear Saran Wrap first and then foil them for when you go to bake. I'm sure to remove the plastic wrap! But cover again with foil. I set mine out in the morning to thaw. Then bake covered for 30-45 minutes at 375. Since all the ingredients are cooked, you just need to warm them up thoroughly!
