the perfect noodles for summer🥢☀️ Spicy Korean Cold Noodles with 5-Minute Beef (Bibimguksu) — serves 2 Ingredients 🍜 200g somyeon (thin Korean wheat noodles) 🥩 200g shabu-style beef slices 🥒 1/2 cucumber, julienned 🥬 1/2 cup well-fermented kimchi, chopped + 1 tbsp kimchi juice 🥚 2 soft-boiled eggs, halved 🌿 4 perilla leaves, thinly sliced (optional but so good) ⚪ toasted sesame seeds Sauce 🌶️ 2 tbsp gochujang 🌶️ 1 tbsp gochugaru 🍯 1.5 tbsp honey (or maesil-cheong if you have it) 🍶 2 tbsp rice vinegar 🥢 1 tbsp soy sauce ✨ 1 tbsp toasted sesame oil 🧄 2 cloves garlic, grated Easy beef 🥢 1 tbsp soy sauce 🍯 1 tsp sugar 🧄 1 clove garlic, grated ✨ 1 tsp sesame oil + black pepper Steps 1. Whisk all sauce ingredients with the kimchi juice and let it sit while you cook. 2. Toss the shabu beef with the easy beef seasoning — no marinating needed, thin slices soak it up instantly. 3. Sear the beef in a screaming hot pan for 60-90 seconds until just cooked with crispy edges. 4. Boil somyeon for 3 minutes, then rinse aggressively under ice-cold water, rubbing to remove starch. Chewy noodles or nothing. 5. Toss the noodles with all of the sauce and the chopped kimchi until every strand is coated. 6.
