It's part of my meal prep, so I'm going to show you exactly how I make it. I have been on a good journey lately and it's been rough, so we've been fiber maxing and it's been working. First thing you're gonna need is a big bag of spinach. Some frozen peas. Lots of fiber in these things. Low fat cottage cheese. And this vegan kale, cashew, and basil pesto from Trader Joe's. So in a blender, we're starting with one cup of cottage cheese. About a fourth cup of the vegan pesto. A full cup of frozen peas. Just this cup adds 8 grams of fiber. I don't wanna measure this, it's probably like 3 or 4 handfuls of spinach. That looks good. Add some salt, garlic powder, and some onion powder. Add a little bit of water to help it blend. She's all blended. Mmm. I've done it again. What a beautiful shade of green. And then I'll take it one step further. Instead of just normal pasta, we got red lentil pasta. Because what's in lentils? Fiber. Also, super high protein. For one serving of this pasta, 15 grams of protein. And 6 grams of fiber. I was really scared it was gonna taste so bad. I can confirm you guys, it tastes great. This is definitely going to be a rotation meal for sure. All right, I'm just gonna pour this right on top. Oh my god, that looks so good. The measurements honestly made a ton of sauce. You could easily half it or quarter it if you're just doing a single portion. I am a hoe for a creamy pasta. This is so creamy. It's all done. I have to go finish putting everything together.
