Sunday I meal prepped and this is exactly what I mean this week. Guys this week we are fiber maxing. We have grilled chicken. We swapped out the white rice for this quinoa & brown rice with garlic & lentils. And we have these gorgeous roasted carrots. And my incredible air fryer chicken breast. If you want the recipe, the full video is posted on my page. The only tweak is this time I added a little bit of lemon and dill. And then to pair with the carrots, I'm really proud of this. I made a homemade yogurt sauce. It's seriously so simple. I'm putting the whole ingredients right here. Mmm, she's perfect. Starting with the quinoa, brown rice and lentil blend. Next is the chicken. And now the best part, the carrots. And then just quickly how I make these. I peeled them and chopped them. I left them fairly large. Some of the smaller ones I didn't even cut. I tossed them in olive oil, salt & pepper, smoked paprika, garlic powder, onion powder, monk fruit. My secret ingredient is I added a little bit of monk fruit on top. Little touch of sweetness really elevates the flavor, I swear. I popped them in the oven at 375 for about an hour. It's not really a set time. You can keep an eye on them and check when they look done. Here's a close up of what they should look like. They should be soft when you bite into them but not like mushy. That looks phenomenal. Last touch is I'm going to drizzle some honey on top of the carrots. Like that. Perfect. And they're all done. And that's lunch for the week. Happy meal prep!
