I have spent years perfecting this queso blanco and let me tell you, once you have this, you'll never go back to the jarred stuff. Start by sautéing one jalapeño and one Roma tomato in some butter until the tomatoes get nice and smudgy. And yes, smudgy is a culinary term. Then pour in milk. You can use whole or low fat, whatever your preference is. Toss in some garlic powder, a touch of cumin, and some red pepper flakes if you're feeling a bit sassy. Next comes in the cheese. I just use single slices of white American cheese most of the time, but if you want to splurge and make it a little more luxurious, go to the deli counter and have them slice off one pound for you. When the cheese is all melted, toss in one 4 ounce can of hatch green chiles and give it another good mix. You can use mild or hot depending on your preference. That is amazing. The perfect consistency, spicy, obviously cheesy, with the perfect acidity from these tomatoes and hatch chilies. This is great. As always, I've left the full recipe in the description below and trust me, you're gonna want to make this one. Enjoy.
