This helps keep the crackers lovely and crisp. Make the dough: Add the butter, flour, grated cheddar, squeezed carrot and salt to a bowl. Mix until everything comes together into a dough. Chill: Wrap the dough and place in the fridge for 20–30 minutes. Roll: Preheat the oven to 180°C fan. Roll the dough out between two sheets of baking paper to around 4–5mm thick. Cut: Cut into small squares or use a little cookie cutter. Place onto a lined baking tray. Bake: Bake for 12–16 minutes, until the edges are golden and the crackers are cooked through. Cool: Leave on the tray for 5 minutes, then transfer to a wire rack to cool completely. They’ll become much crispier as they cool. TIP: For an extra crisp cracker, turn the oven off once baked and leave them inside for another 5–10 minutes with the door slightly open. 🧡 Storage: Keep in an airtight container for up to 1 week (if they last that long!). Perfect for lunchboxes, after-school snacks or those “I’m hungry again” moments!
