🥔 **CHEESY POTATO CAKES** 🧀 Golden and crispy on the outside, soft and cheesy in the middle — these are such a useful little recipe to have up your sleeve! Perfect for breakfast, lunch, lunchboxes or a snack, and a brilliant way to use up leftover potatoes. You can also make extra potatoes specifically for these and freeze a batch for another day. **Makes 6 small or 12 large** **YOU’LL NEED** 500g potatoes, peeled and chopped 100g mature cheddar, grated 75g plain flour, plus extra for shaping 1 egg 2 tbsp butter (optional) 1 tsp dried herbs (optional) ½ tsp garlic granules (optional) Salt & black pepper A little oil or butter for cooking **METHOD** 🥔 Boil the potatoes in salted water until completely tender. Drain well and leave to steam dry for a couple of minutes. 🥔 Mash until smooth, then mix in the butter, cheese, flour, egg, herbs, garlic granules and seasoning. 🥔 Bring together into a soft dough, then lightly flour your surface and shape into a round about 2cm thick. 🥔 Cut into wedges or use a cutter to make individual potato cakes. 🥔 Fry in a little oil or butter for 3–4 minutes on each side, until golden and cooked through. **MAKE AHEAD** Keep in the fridge for up to 3 days. Or cool completely, freeze in a single layer and transfer to a freezer bag. Reheat straight from frozen in the air fryer or oven until piping hot throughout.
