Approximate macros: Whole dish: 1,122 calories | 115g protein | 77g carbs | 37g fat Half: 561 calories | 58g protein | 39g carbs | 19g fat One-third: 374 calories | 38g protein | 26g carbs | 12g fat LAYER 1: • 300g thick fat-free skyr (10.6 oz; about 1¼ cups) • 40g chocolate-flavored whey protein concentrate (WPC) (1.4 oz) • 10g unsweetened cocoa powder (0.35 oz; about 2 tbsp) • 5g honey (0.18 oz; about ¾ tsp) • About 3g cinnamon (roughly 1¼ tsp) Mix very well for 2 to 3 minutes, then spread evenly across the dish. BISCUIT LAYER: • 4 cocoa petit-beurre-style tea biscuits, 20g total (0.7 oz) Place them over the first layer, then refrigerate while preparing Layer 2. For alternatives, use Goya Cocoa María Cookies in the US or Ülker Cocoa Petit Beurre Biscuits in the UK. Just weigh out 20g since the biscuit sizes vary. LAYER 2: • 200g thick fat-free skyr (7.1 oz; about ¾ cup) • 20g cookie-flavored plant-based protein powder (0.7 oz) • About 2g cinnamon (roughly ¾ tsp) • 10g almond flour (0.35 oz; about 1½ tbsp) • Dash of vanilla extract • Up to 50ml almond milk (1.7 US fl oz; about 3 tbsp plus 1 tsp) START WITH 0ML OF MILK. Mix everything first and only add the milk slowly if the mixture is too thick. If it is already runny before adding any milk, your yogurt is not thick enough hehe. I used the full 50ml this time, so it came out softer than my usual ones, but the taste was phenomenal regardless. Spread over the biscuit layer, then place one additional cocoa biscuit, about 5.4g (0.19 oz), along one of the short sides. MILK CHOCOLATE TOPPING: • 40g milk chocolate (1.4 oz) • 2g coconut oil (about ½ tsp) I used Callebaut 823 milk chocolate, but use whichever one you like. Melt them together, then spread the chocolate over the top. I thought 40g would cover everything. Halfway through, I realized that was not happening, so I changed direction and called it aesthetics hehe. FINISHING: • 2 Mini Kinder Bueno pieces, 10.8g total (0.38 oz) • 5g crushed almonds (0.18 oz; about 2 tsp) Place the Kinder Bueno pieces beside the single cocoa biscuit, then add the crushed almonds along the opposite edge. I left this one in the fridge for 3 hours, then put it in the freezer for 20 minutes before eating. I usually leave these in the fridge for 5 to 6 hours, but I did not have time that day.
