Nobody told me ribs could be cooked like this and now I'm obsessed. Start with about two pounds of pork ribs and 5 ounces of butter. Rub that butter all over the ribs, making sure every piece gets completely coated. Then cut the ribs into smaller pieces and lightly coat each one in all-purpose flour. This little step is going to help create an incredible crust. Now melt one tablespoon of unsalted butter in a large pan over medium-low heat. Add the buttered ribs, facing up, and fry them slowly until they develop a beautiful golden crust on every side. Don't rush this part. That color means flavor. Once they look like this, take them out and set them aside, but keep that pan exactly as it is because everything left at the bottom is about to make these ribs even better. Add two sliced onions and about 3.5 ounces of mushrooms. Sauté slightly until they soften slightly. Then season with one teaspoon of salt, black pepper, sweet paprika, and one teaspoon of fine herbs. Mix everything together and let those vegetables soak up all that flavor. And this is where these ribs go to another level. Put the golden ribs back into the pan. Pour in about two cups of beer, cover, and let everything cook for 20 minutes. The smell at this point is insane. Then lift the lid, add a pinch of salt and about 3.5 ounces of tomato sauce. Stir until every rib is completely covered in that rich sauce. Cover again and cook for five more minutes. Now look at that. The sauce is thick, the onions are loaded with flavor, and those ribs are ridiculously tender. Finish with freshly chopped chives and spoon those onions, mushrooms, and sauce right over the top.
