I'm never smoking a whole turkey again after making turkey breast like this. Start with a bone-in turkey breast and remove the temperature probe. Then carefully peel off the skin because on the smoker, that skin can easily turn rubbery instead of crispy. Coat the turkey with yellow mustard as a binder, then hit it generously with all-purpose seasoning and coarse black pepper. Set up your charcoal grill for indirect heat. Place a foil pan underneath with some chicken stock, then put the turkey breast right in the center. Cover it and let the smoke do its thing. After about two hours, when the internal temperature hits around 140 degrees Fahrenheit, pour an entire stick of melted butter over the turkey, wrap it tightly in foil, and put it back on the grill. Pull it at 160 degrees Fahrenheit. Let it rest, then slice it open. Smoky, juicy, and buttery. And after tasting this, a whole turkey suddenly feels completely unnecessary.
