One-pot cheesy taco orzo!! A must try recipe for the colder evenings 😭.
Serves 4–5
Ingredients:
1 red onion, finely chopped
1 red pepper, finely chopped 150g frozen sweetcorn
3 cloves garlic, finely minced
1 tbsp paprika
1 tbsp chilli powder, or as much as you can handle
200g orzo 1 vegetable stock cube in 350ml boiling water (add more if needed) 1 jar passata (around 500g)
1 tin black beans, drained and rinsed 1 big handful fresh coriander, chopped, plus extra to serve 100g grated cheddar cheese
Salt and pepper, to taste Method:
1. Heat a drizzle of olive oil in a large pan over medium heat. Add the red onion, red pepper and frozen sweetcorn, season with a little salt and pepper, and fry for 3–4 minutes until starting to soften. 2. Add the garlic and cook for a further 2 minutes. 3. Add the paprika and chilli powder, stir everything together, then add the orzo and mix until well coated. 4. Dissolve the stock cube in 350ml boiling water and pour into the pan, followed by the passata. Stir well, then add the black beans. 5. Bring to a gentle simmer and cook for 10–15 minutes, stirring regularly, until the orzo is cooked and most of the liquid has been absorbed. If it starts looking too dry before the orzo is cooked, add a splash more water. 6. Stir through the fresh coriander and grated cheddar, then cook for a further 2–3 minutes until the cheese has melted and everything is creamy and well combined. 7. Serve topped with extra fresh coriander if you like. #orzo #onepotmeals #taco #quickrecipes #easymeal
