10-minute sun-dried tomato butter beans! I just love this recipe so much. You can serve it with fresh bread, rice or even mixed with pasta. It is so versatile!!
Serves 2
Ingredients
1 tbsp olive oil 1 onion, diced 1/2 jar sun-dried tomatoes, roughly chopped A handful of cherry tomatoes, halved 3 garlic cloves, minced 1 tbsp chilli flakes (use less if you prefer it milder) A sprinkle of coriander (optional) 1 tin butter beans, including the liquid 1/2 stock cube mixed with 1/2 tin of water (using the empty butter bean tin) 1 tbsp tomato purée Extra coriander to garnish (optional)
Method
1. Heat the olive oil in a pan over medium heat. Add the diced onion and fry for 2–3 minutes until softened. 2. Add the sun-dried tomatoes and cook for another 2 minutes. 3. Add the cherry tomatoes and cook for a further 2 minutes, until they start to soften. 4. Stir in the garlic, chilli flakes and optional coriander. Cook for another 2–3 minutes until everything is fragrant and starting to caramelise. 5. Add the butter beans with their liquid, the crumbled stock cube, ½ tin of water and the tomato purée. Stir everything together. 6. Simmer for 4–5 minutes, stirring occasionally, until the sauce is thick, creamy and full of flavour. 7. Finish with a sprinkle of fresh coriander and serve with crusty bread for dipping, or spoon over rice or pasta.
My top tip: Keep the liquid from the butter bean tin! It helps create that lovely thick, creamy sauce. #10minutemeal #quickmeal #butterbeans #onepan #easymeals
