Crock-tober - Day 9 🍂 Creamy Sausage Tortellini A quick recipe is below and if you want more detailed instructions check the link in my bio! 31 days of crockpot dinners! All made with wholesome ingredients. Crock-tober needed a pasta dish so today we’re making sausage tortellini! And no, there’s no block of cream cheese in here or canned soup either. Ingredients 1 lb Italian sausage - mild or hot 1 onion - diced 15 oz diced tomatoes - plain or fire-roasted, undrained 1 cup chicken broth - low-sodium 3 cloves garlic - minced 2 teaspoon Italian seasoning ¼ teaspoon black pepper ¼ teaspoon sea salt 18 oz tortellini - refrigerated, use gluten-free or dairy-free if needed ½ cup coconut milk - or heavy cream Grated parmesan and chopped fresh parsley - for serving (optional) 1. In a large skillet over medium heat, cook the sausage, breaking it into crumbles as it cooks, until browned and cooked through. 2. Transfer the sausage to a crockpot. Add the onion, diced tomatoes, broth, garlic, Italian seasoning, black pepper, and sea salt and stir to combine. Cover and cook on LOW for 4 to 6 hours or HIGH for 2 to 3 hours. 3. Add the tortellini and pour the coconut milk over top. Stir well so every tortellini is sitting in some liquid. Cover and cook on HIGH for 8 to 15 minutes, until the tortellini is tender. Start checking at 8 minutes. 4. Serve warm, topped with parmesan and parsley if desired. #crocktober #crockpot #healthyfood
