Welcome to Crock-tober. My new series where I'm sharing 31 hands-off crockpot dinners every single day in October. As a mom of three little ones, my crockpot has become my favorite tool in my dinner toolbox. I dump everything in in the morning or over lunch and I don't think about it again until it's time to eat. Today we're kicking things off with my teriyaki chicken and noodles. It is so delicious. The chicken cooks all day in a simple teriyaki sauce which I make inside the crockpot. It starts with honey, coconut aminos or soy sauce, sriracha, rice vinegar, sesame oil, garlic, and ginger. I add in a little starch to help thicken it up before nestling the onions and chicken in the sauce. Then I literally go about my day and when I come back I have the most delicious, tender chicken I have ever seen. It literally pulls apart in the crockpot with tongs. I like to add in some red bell pepper and broccoli and then nestle some ramen noodle blocks into the bottom. We're going to pour some broth over the noodles and let them cook for about 20 minutes. Give everything a big toss and dinner is served.
