Welcome back to Crock-tober, where I'm sharing a new crockpot recipe every single day in October. Today we're turning a chuck roast into the most delicious and satisfying birria tacos. And I will be the first to tell you that my recipe is so not authentic. We are taking all the shortcuts, but we are trying to get the flavor profile to be as close to the real deal as possible. First, I like to slice the chuck roast into smaller pieces and then get a nice sear on both sides. This is going to give it a little bit more flavor, but it's totally optional. Then we add it to the crockpot with the diced onion, and here's where my shortcut comes in. We're going to use a jar of enchilada sauce, which has most of the flavor components of the traditional birria broth, but it's pre-made. Throw in a few chipotles with adobo sauce, a few seasonings, and beef broth, and then it roasts low and slow for six to eight hours. Before pulling the beef, you want to remove some of that oil on top, which is like liquid gold. That's what you use to toast the tortillas. Pull the beef in a separate pan and it should literally fall apart. I like to add a few spoonfuls of the broth for even more flavor. Here's where that oil comes back into play. We spoon a little on top of a hot skillet and then immediately toast a corn tortilla. Add the Oaxaca cheese, pulled beef, and cilantro, and then fold over the tortilla. Then we repeat this process until we have a platter full of the most delicious birria tacos. But we're not done yet. That broth leftover in the crockpot is kind of the star of the show. We use it for dipping the tacos. Trust me, you will not regret it.
