Here’s the recipe! ⬇️ CREAMY CHICKEN & WILD RICE SOUP 🥣🌿 INGREDIENTS: Soup Base: • 2 lbs boneless, skinless chicken breasts (raw) • 1 cup wild rice blend (uncooked, rinsed — GF) • 1 medium yellow onion, finely diced • 3–4 carrots, diced • 3–4 stalks celery, diced • 2 medium Yukon Gold potatoes, diced (I took these out in the end - didn’t need them) • 3 cloves garlic, minced • 5 cups low-sodium chicken bone broth • 1 tsp poultry seasoning (or dried thyme, sage, rosemary) • 1/2 tsp garlic powder • 1 tsp salt & 1/2 tsp black pepper Creamy Stir-In (At the End): • 3/4 cup plain non-fat Greek yogurt • 1 tbsp fresh lemon juice (I didn’t love this… maybe leave it out?) INSTRUCTIONS: 1️⃣ Layer raw chicken breasts at the bottom of the slow cooker. Add rinsed wild rice, onion, carrots, celery, Yukon Gold potatoes, garlic, and seasonings. Pour in chicken bone broth. 2️⃣ Cover and cook on LOW for 6–7 hours (or HIGH for 3–4 hours) until the wild rice is tender and chicken is cooked through. 3️⃣ Remove chicken breasts, shred with two forks, and return to the crockpot. Scoop out 1–2 cups of cooked potato chunks and broth into a bowl, mash smooth with a fork, and stir back in to thicken. 4️⃣ Turn heat to WARM/LOW. Whisk Greek yogurt and fresh lemon juice until smooth, then stir directly into the soup. 5️⃣ Let sit 5 minutes to warm through, ladle into bowls, and serve! #crocktober #crockpotrecipes #onepotmeals #glutenfreerecipes #easydinner
