Welcome back to another episode of dietitian freezer prep. I'll show you how I stock my freezer with homemade staples that save time, money, and make healthy eating feel effortless. Today's freezer staple is smash burger tacos. They might be the easiest thing I've made yet. I started by portioning out 2 oz of lean ground beef into balls and smashing them onto some low-carb tortillas. You can use whatever tortillas you prefer. From here, if you have the freezer space, the easiest method is to freeze them flat on a sheet pan first, then transfer them to a freezer bag once they're solid. My freezer is a little too packed for that, so I use some parchment paper that I cut up and just put them on top of the meat stack them and then place them in the freezer bags. The best part here is that you can cook them straight from frozen whenever you're ready. You just place the meat side down onto a hot griddle, Blackstone, skillet, whatever you've got. And then you flip it once the beef is cooked fully, crisp the tortilla up. Top it with a slice of cheddar cheese or your favorite burger topping. This is one of my favorite freezer meals to serve because it's already portioned high in protein, so I know the macros. Cooks in minutes. And it makes those busy weeknights so much easier.
