When eating gets a whole lot easier when your freezer looks like mine. Welcome to dietitian freezer prep. A new series where I show you exactly how I stock my freezer with homemade staples that save time, money, and make healthy eating feel effortless. Today, we're starting with homemade chicken marinade. I buy chicken in bulk, cut it into bite-size pieces, divide it into freezer bags, and mix each batch with a different marinade before freezing them flat. Today's flavors: Persian Saffron Chicken, Honey Harissa Pesto Chicken, and Honey Chipotle and Balsamic. I had a lot of honey to use up. This whole prep took me about an hour, but now I have five different proteins ready to go whenever I need them. The night before, I'll just move a bag from the freezer to the fridge, and as it thaws, it marinates. By the time dinner comes around, all I have to do is cook. This meal prep, as a dietitian, this is one of my favorite meal prep hacks because buying chicken in bulk is usually a lot more affordable, and making the marinades myself helps me control exactly what goes in them. Having healthy protein on hand like this, marinated, ready to go, makes it so much easier to make a healthy choice during busy weeknights when I just don't feel like prepping a huge meal.
