You guys have had so many questions about how I cook these smash burger tacos from frozen, so let me show you exactly how I do it. Welcome back to another episode of dietitian freezer prep where I show you how I stock my freezer with homemade staples that save time, money, and make healthy eating feel effortless. These are smash burger tacos. Part two. These go straight from the freezer onto a hot skillet or griddle, no thawing needed at all. You want to make sure that your surface is preheated and then you can put it on there, meat side down, until it gets brown. One of the questions I got a lot in the comments was about whether the tortilla gets soggy when you cook it. You want to make sure that you're using the leanest ground beef that you can find at your store, 93/7, because one, it's healthier, you get a little less saturated fat. And with doing that, another key is also to make sure that you're pressing the meat very thin onto that tortilla. If the beef is too thick and the pan isn't hot enough, it can release more moisture and steam to the tortilla. We don't want that. Once your beef is cooked, that's it.
