Welcome back to another episode of what I ate for dinner as a dietitian and why. Tonight we're making honey soy chicken bowls. For the base, I used microwavable sushi rice, but I only had half. So I cut the portions down. I'm keeping carbs in check without completely eliminating them. Your body still needs glucose for fuel. You just don't want to have the bulk of your meals be carbs. For protein, I premarinated chicken breast in a honey and soy sauce mixture and threw it on the Blackstone when I was ready. High quality lean protein like this is so important. Chicken in particular is packed with B vitamins like niacin, B6. And then we have the star of the show. We made some spicy chili oil edamame. I tossed them on the blackstone then tossed them in some chili oil, soy sauce, mixture of garlic powder, onion powder, and a little bit of sugar. Edamame is one of the only complete plant proteins out there. So you're getting all nine essential amino acids, plus they're loaded with fiber, folate, vitamin K, and iron. It's definitely a powerhouse food. So this bowl gives you double protein source, controlled carbs, and tons of micronutrients across the board.
