each and every sunday i prep a few things to make eating easier during the work week and here's everything i prep this week today's meal prep i'm gonna show you how i add good culture cottage cheese to two unique recipes starting by making a cottage cheese chocolate mousse that we will turn into this week's cold foam and one cup of cottage cheese which has 28 grams of protein by the way a little bit of cocoa powder maple syrup and a pinch of flaky salt while that's thickening in the fridge for 30 minutes i'm gonna start the pesto breakfast sandwiches add one hefty dollop of cottage cheese to my scrambled eggs to make the fluffiest creamiest egg patties those bake for 25 minutes i prep my sandwich ingredients and then finish my cold foam adding 1 cup of heavy cream blending it all up until it's thick oh excited about my chocolate mousse cold brew lattes this week now that my egg patties are cooled we cut them up and look at that texture it's unreal how blending in cottage cheese created some of the creamiest eggs i've ever made assemble the breakfast sandwiches by adding chicken sausage pesto a beautiful heirloom tomato topping it off with a slice of mozzarella cheese and is this not the most gorgeous breakfast sandwich ever wrap those up in aluminum foil and breakfast is officially covered for the week i wrap up my meal prep with a peanut butter chocolate no churn ice cream with all of the fixings and then a mediterranean inspired dense bean salad for lunch closing out another amazing meal prep week using simple high quality ingredients like good culture to make eating and staying full easier
