Season the Meat: In a bowl, mix the sausagemeat with mixed herbs, garlic powder, salt, and pepper until combined. Divide the mixture into 4 equal portions. 2. Wrap the Eggs: Flatten one portion of sausagemeat in your hands, place a boiled egg in the centre, and carefully wrap the meat around it until fully sealed. Repeat for all 4 eggs. 3. Bread the Eggs: Set up three bowls: one with flour, one with beaten egg, and one with panko breadcrumbs. Roll each meat-wrapped egg first in flour, then dip in beaten egg, and finally coat thoroughly in panko breadcrumbs. 4. Air Fry: Place the Scotch eggs into the air fryer basket and spray generously with oil spray.
