Another day another tofu 🌿🤍 I have made so many versions of tofu eggs across Vietnam and Thailand. Now that I'm in Malaysia I wanted to make a Malaysian inspired one. Squid is my favourite seafood but I haven't bought it in over a year because it's always so expensive. Then I spotted it for a cheaper price on PandaMart and I was so happy 😭 Had some leftover tofu too so here we are. Sambal Tofu Sotong Eggs 🌿✨ Ingredients 1. Squid 4.5 RM ($1.08) - UK: £3.90 - USA: $4.00 2. Sambal paste 1.70 RM ($0.41) - UK: £0.30 - USA: $0.30 3. 2 eggs 2.5 RM ($0.60) - UK: £0.80 - USA: $0.50 4. Egg tofu half 0.5 RM ($0.12) - UK: £1.50 - USA: $2.22 5. Squid marinade: chilli flakes, salt, black pepper 0.5 RM ($0.12) - UK: £0.10 - USA: $0.10 6. Paprika 0.5 RM ($0.12) - UK: £0.10 - USA: $0.10 7. Coconut milk 1.5 RM ($0.36) - UK: £0.50 - USA: $0.80 8. Cilantro 0.4 RM ($0.10) - UK: £0.25 - USA: $0.15 9. Green chillies chopped 0.10 RM ($0.02) - UK: £0.20 - USA: $0.20 10. Sesame seeds 0.30 RM ($0.07) - UK: £0.20 - USA: $0.20 My total: approx 12.5 RM ($3.00) Estimated UK total: approx £7.85 Estimated USA total: approx £8.57 Directions 1. Marinate the squid rings and rest for 10 minutes. 2. Cut egg tofu into rounds and fry in a pan with the squid. Sprinkle paprika and fry until crispy. 3. Add chopped green chillies. 4. Pour in 2 beaten eggs. Cover and cook for 4 minutes. 5. Mix sambal with coconut milk and pour over the egg and tofu. 6. Finish with cilantro and sesame seeds.
