(& that’s saying something 🤭) On The Menu ⬇️⬇️⬇️ Street Corn Chicken Bowls: (inspo by @Landry 🩵) For the chicken: -1.5lbs chicken breast cubed -1-1.5T olive oil -1.5 tsp chili powder -1 tsp smoked paprika -1tsp garlic powder -1/2 tsp onion powder -1/2 tsp flaky sea salt -black pepper to taste Marinate for at least 15-20 min in fridge before cooking on stovetop. Street corn: -1 can corn (I also used some extra frozen fire roasted) -1.5 c cottage cheese (I blended mine and used Good Culture) -1 diced jalapeño -1/3c diced green onion -3T cilantro -1 tsp garlic powder -1 tsp onion powder -1 tsp chili powder -juice of 1 lime -1/4 c feta cheese Lightly toast the corn to give it some color, let it cool off a bit and add it all together!
