Here's what I meal prep this week for five long days at the hospital. I need something that's really grab and go and easy to eat in the car. So I made these apple pie overnight oats. First, start by dicing up two apples. I used Gala, but I think Honeycrisp would have maybe worked a little bit better here. Then add some cinnamon or pumpkin pie spice, two teaspoons of brown sugar and one teaspoon of maple syrup because you're going to add these to the stove to caramelize before adding to the rest of your mix. It's one and one third cup oats, one fourth cup vanilla protein powder, one fourth cup chia seeds, a big pinch of salt, more cinnamon or pumpkin pie spice, one fourth cup Greek yogurt, vanilla extract, and one and one third cup unsweetened vanilla almond milk. Mix in half the apple mixture and save the rest to top with one teaspoon of pecans. I actually made this same recipe last week with peaches instead of apples, and they were also so good. For lunches, I made Morgan Peterson's recipe of chicken Caesar protein pasta bowls. While I boiled the pasta, I washed and chopped my romaine and butter lettuce. I already know what you're thinking, your lettuce is going to wilt throughout the week, but the answer is surprisingly no, but I made sure to dry it off really, really well. Next, add the cooled pasta, Parmesan cheese, and one pound of shredded chicken. You guys, I recently discovered that Aldi sells pre-seasoned pulled rotisserie chicken, and it's about to change my life forever. I've literally been to Aldi a million trillion times, so I'm kind of upset that I didn't know this existed till now. This one actually made six servings and I packed my croutons and Caesar dressing on the side so it didn't get soggy. As always, the recipes will be in the caption below.
