Infinity Chili Cheese Dogs (Makes 4) Ingredients: 1/2 lb ground beef, 1 diced onion, 3 minced garlic cloves, 2 tbsp chili powder, 1 tsp cumin, 1/4 cup tomato paste, 1 tbsp cocoa powder, 2 cups beef stock, 1 sheet puff pastry, 4 all-beef hot dogs, 4 cooked bacon strips, 4 Colby Jack cheese sticks, 1/2 cup small raw diced onion, mustard. Sauté the diced onion over medium-high heat for 4 minutes or until lightly browned. Add the beef and brown it. Mix together, add the garlic, and cook 2 minutes. Stir in the chili powder, cumin, tomato paste, and cocoa powder. Season with salt and pepper. Add the beef stock and simmer 15 minutes. Make an infinity cut in each hot dog. Cut the puff pastry into 4 pieces and fold them over. Place each piece in a small cake or bread pan. Add one cheese stick, bacon strip, and hot dog to each. Bake at 400°F for about 25 minutes. Remove from the pan and top with mustard, chili, and raw diced onions.
