I lost 45 pounds eating food that actually tastes good. This is one that you might want to meal prep every single week. Mini golden potatoes. I'm gonna wash these off. Right, so those off. Normally I would just dice these and half, but they're kind of big. Olive oil. About a tablespoon and a half. Garlic powder. One tablespoon. Onion powder. Two teaspoons. Paprika. One teaspoon. Pink Himalayan salt. One teaspoon. Lastly, some pepper. Half a teaspoon. Give those a good toss. Spilled one on the floor. I'm gonna line a baking sheet with parchment paper. I'm gonna put these in the oven to roast at 425 degrees for about 25 to 35 minutes. Two bell peppers. One yellow onion. I tossed these in the same bowl that I had the potatoes in so they could soak up the leftover oil and seasonings. When the potatoes have about 25 minutes left, I'm gonna put these in. We're gonna use chicken breast. This is about two and a half pounds. We're gonna cut that up. Transfer that to our bowl. I know y'all keep on telling me to make my own, but this is easy. Taco seasoning. Toss that around in there. Grab our pan. Add a little bit of olive oil. I'm gonna try my best to arrange these in a single layer. Smells so good. Now we'll do our second batch. I'm gonna add in our first batch of chicken with that. This is optional. I feel like it just adds a little bit of flavor, but I'm just gonna juice some of this lime on there. That is our chicken. This is where it gets fun because before we assemble our bowls, we're gonna make a little sauce to put on top. Really get that drizzle effect. Now we'll assemble our meal prep. Crispy potatoes. I ate some of these right when they were out of the oven. Then we'll take our chicken and our peppers and onions. That goes in. Lastly, I have some queso here, thinned with a little bit of skim milk. Drizzle some of that on the top. So these are our cheesy chicken mexi bowls. So good. Let me know if you try it.
