Ritz cracker chicken. :) It’s one of my favorites! What are some of your favorite meals you grew up eating? I’d love to hear what brings back childhood memories for you! Start by prepping your chicken however you’d like. I’m using two chicken breasts and slicing them in half to make them thinner so they get nice and crispy. Season both sides well, then set them aside while you prepare your wet mixture. For the wet mixture, I use buttermilk, two eggs, and the same seasonings I used on the chicken. I don’t measure anything, just enough buttermilk to fully coat each piece. For the breading, crush about 1½ sleeves of Ritz crackers. If you have the time, let the chicken soak in the buttermilk mixture for a few hours. I was in a time crunch today, so I simply dipped each piece into the wet mixture and then into the crushed Ritz crackers. Press the crackers firmly onto both sides of the chicken so they’re well coated. I like to really press them into the chicken to help the coating stick. Heat enough vegetable oil in a skillet over medium high heat to fry the chicken. Don’t overcrowd the pan. Cook one piece at a time, or only as many as your pan comfortably holds, so each piece cooks evenly and gets nice and crispy. Fry for several minutes on each side until golden brown and cooked all the way through.
